Hi folks,
 
I hope you all enjoyed a wonderful Spring Break and are back all ready to finish out the semester.  Time flies and it'll be over before we know it!
 
This week has been designated Wellness Week here at Eastern, so with advice from Nutrition Professor Dr. Julie Collins, the Cafeteria has prepared menus featuring healthier food choices for the week.  You'll probably notice more baked items, fewer fried foods, more vegetables, and a wonderful selection of items on our salad bar.   Also note there will be various activities and informational presentations throughout the week to help educate and inform you in your quest for better health and overall wellness.  Get your groove back by participating in the Just Dance Wii Competition in the Cafeteria from 11:00 to 1:00 on Monday.  Prizes will be awarded for 1st, 2nd, and 3rd place winners.  There will also be a Healthy Heart display by the Choctaw Nation at the same time, and Red Cross handouts on dorm safety will be available.  Tuesday, there will be a display on "Portion Distortion" in the Cafeteria, and guest speakers, Mr. Brian Musgrove, R.D. from McAlester Regional Health Center on Weight Management and Bariatric Surgery, and Mr. Michael Minnis, R.D. Candidate OU HSC on Sport Nutrition from 1:10 - 3:00 at Baker Hall 115, (ITV to Idabel and McAlester).  Door prizes will be awarded at all campuses.  On Wednesday, our campus Chief of Police, Mr. Bryan Denny will give a presentation on Self Defense at 11:30, and during the lunch hour, Ruth Brelsford will educate interested individuals on stress relief through Meditation in the Johnnie Wray Little Theatre in Pratt Hall.  Thursday, see the display in the Cafeteria to find out "How Much Sugar is in Your Drink?", and visit the Choctaw Nation Behavioral Health display in the Cafeteria from 11:00 a.m. to 1:00 p.m., and attend the Domestic Violence presentation from 1:00 to 5:00 p.m. in the Johnnie Wray Theatre.
 
This will be a very busy week on campus, aside from all the Wellness Week activities, as we will be hosting Gear Up Groups on Tuesday and Wednesday, a Living in Latimer Coalition meeting on Thursday, as well as the annual FFA Interscholastic Judging Contest on Friday.  (There will be no day classes on the Wilburton campus on Friday due to this major event.)
 
Birthdays for the week include:  Monday, Computer Information Systems Professor Darren Schoggins; and Tuesday, Drs. Karen Harrison and Richmond Adams.  Please wish these folks a wonderful day if you see them around campus.
 
Lunch menus for Wellness Week include:
 
Monday:  Meatballs with peppers, roasted potatoes, angel hair pasta, steamed broccoli, corn on the cob, lima beans, baked potato bar, blackberry cobbler, and roasted garlic and tomato soup.
 
Tuesday:  Baked chicken breast, cilantro lime rice, black eyed peas, steamed California blend vegetables, baked sweet potatoes, green beans, no bake peanut butter cookies.
 
Wednesday:  Broccoli beef, bowtie pasta, steamed Scandinavian blend veggies, steamed cabbage, sautéed squash, carrots, baked potato bar, apple crunch.
 
Thursday:  Apricot chicken, steamed rice, oriental blend veggies, steamed broccoli, corn, pinto beans, baked sweet potatoes, oatmeal raisin cookies.
 
Friday:  Baked tilapia or deli subs with chips, steamed rice, Brussels sprouts, carrots, steamed veggie blend, baked potatoes, angel food cake with berry topping.
 
Dinner menus include:  
 
Monday:  Grilled chicken or hot steak subs with chips, cilantro lime rice, steamed zucchini, mixed veggies, carrots.
   
Tuesday:  Pepper steak with roasted potatoes or deli subs with chips, steamed cabbage, steamed cauliflower, veggie mix.
 
Wednesday:  Baked ham or grilled chicken sandwiches with chips, sweet potatoes and apples, peas and potatoes, penne noodles with garlic, steamed spinach.
 
Thursday:  Baked pork loin or hot BBQ beef sandwiches, steamed potatoes, Monterey blend veggies, corn on the cob, pork and beans.
 
Friday:  Choice of Cyber menu.
