 Hi folks,
 
Welcome back after a wonderful Spring Break week!  I hope you all had a fantastic time and were ready to come back and finish out the semester.  It'll be over before we know it!
 
This week has been designated as Wellness Week here at Eastern.   If you've been thinking of losing weight, getting more physically fit, eating healthier, quitting a bad habit, or making some other positive change to your lifestyle, this week is the perfect time to get serious about it and lengthen your life.  There will be various activities and displays and a speaker to help you learn  more about a healthy lifestyle and how to make better choices to benefit your health.   Visit the Cafeteria on Monday, Wednesday and Thursday to view various that will help you toward better health.
 
At 11:00 a.m. on Wed. March 25, as part of the Julian J. Rothbaum Distinguished Lectureship Series, Ret. U. S. Army Major Ed Pulido will present "Challenge, Triumph and Change: The Major Ed Pulido Story" in Mitchell Auditorium.  This event is free and open to the public.  (The event was originally scheduled for Feb. 16, but was rescheduled due to weather conditions.)
 
Friday, Eastern will once again host the FFA Interscholastic Contest, with students from many area schools participating.  There will be no Eastern day classes on that day.
 
Dr. Karen Harrison, Vice President of Academic Affairs will be celebrating her birthday this week on Wednesday, so be sure and wish her a great day when you see her on campus.
 
Lunch menus for Wellness Week include:
 
Monday:  Baked chicken breast, rice pilaf, black eye peas, California blend vegetables, baked potatoes, green beans, no bake peanut butter cookies.
 
Tuesday:  Meatballs with peppers, roasted potatoes, angel hair pasta, steamed broccoli, corn on the cob, Lima beans, baked sweet potatoes, lemon ice box cake.
 
Wednesday:  Apricot chicken, steamed rice, Oriental blend vegetables, steamed carrots, corn, pinto beans, baked potatoes, oatmeal raisin cookies.
 
Thursday:  Broccoli beef, bowtie pasta, steamed Monterrey blend vegetables, sautéed squash, steamed wild rice, baked sweet potatoes, apple crunch.
 
Friday:  Baked tilapia or deli subs with baked Lays' potato chips, steamed rice, Brussels sprouts, carrots, Cape Cod blend vegetables, baked potatoes, cookies and brownies.
 
Dinner menus include:
 
Monday:  Pulled pork or chicken melts with baked chips, steamed rice, steamed broccoli, pinto beans, baked potatoes,
 
Tuesday:  Baked ham or grilled chicken sandwich with baked chips, yams and apples, Antigua blend vegetables, steamed spinach, penne noodles with garlic.
 
Wednesday:  Grilled chicken or hot BBQ sandwich with baked chips, corn on the cob, pork and beans, seasoned roasted potatoes, rice pilaf.
 
Thursday:  Pepper steak with steamed red potatoes, or deli subs with baked Lays', sautéed vegetable blend, angel hair pasta, black eye peas.
 
Friday:  Pizza and pasta.
 
The Cyber Café menu for the week includes:  Tuna or chicken salad sandwiches, grilled chicken sandwich or wrap, smoked turkey or ham club sandwiches, and deli subs.  All sandwiches served with baked Lays' chips.  Make your own Chef Salad at our salad bar, and check out the fresh fruits and vegetables available there.
