[OK-AIR] demographics questions on survey

At OU, we've had some preliminary discussions on this topic, but there haven't been any institution-wide changes to data collection on the Norman campus. I think we may be close to something, though. They've gotten further on the topic at HSC, but Brandt would need to speak for them on that.

OU-NC has started, with 2018-2019 reporting year, to have a third category on reports: male, female, and non-binary/not reported. Not 100% happy with that third label, but it's at least technically accurate = those are folks who didn't answer, and we know of a least one person who didn't answer because they self-identify as non-binary.
